About My Baking Process
People often ask how I get those realistic tree-bark textures or smooth, sharp edges without using fondant. It is all in the ganache. I use a technique where I chill the cake layers between every application, letting the chocolate set firm so I can carve and smooth it by hand. It takes a bit more time than standard icing, but it ensures your cake is entirely edible, stable, and perfectly finished for your celebration.
How I Create Your Cake
When you order a custom cake, the process starts long before the oven turns on. I sketch out your theme first, ensuring the design translates from your vision to something structurally sound.
The Ganache Difference
My process is strictly fondant-free. I rely on high-quality chocolate ganache for structure. Because I do not use artificial stabilizers, I rely on proper temperature control in my Whitefield kitchen to keep everything smooth. This is why I ask for at least 48 hours for standard orders, as the cakes need time to settle and firm up properly.
From Sketch to Edible Art
For themed projects like jungle or character cakes:
- Planning: We finalize the design based on your inspiration.
- Baking: Everything is 100% eggless, baked fresh for your pickup date.
- Sculpting: I hand-pipe, carve, and stack the tiers. If we are doing textures like tree bark or abstract watercolor effects, this is done layer by layer.
- Finishing: I add the final details, whether it is hand-painted fondant accents or fresh floral arrangements.
Why I Do It This Way
