Recreating a Tiramisu without eggs is a challenge because the traditional recipe relies on yolk-based custards for that characteristic richness. I bypass common shortcuts by using high-quality Mascarpone cheese and a slow-steeped Arabica coffee concentrate. This ensures the texture remains silky and the coffee profile stands out, providing an authentic experience without compromising my eggless promise.
The Art of the Eggless Classic
When I decided to put Tiramisu on my menu, I knew it had to be done right. There are many versions that rely on gelatin or synthetic thickeners to mimic the texture of a traditional Tiramisu, but I wanted something cleaner. By focusing on the quality of the primary ingredients—pure Mascarpone and premium Arabica beans—I achieve the density and deep flavour profile that this Italian classic demands.
What Goes Into My Tiramisu
- Authentic Mascarpone: I use only pure Mascarpone, which provides that necessary creamy, slightly tangy base that holds the structure of the dessert.
- Arabica Coffee Soak: Instead of instant coffee granules, I prepare a specific Arabica coffee reduction. This gives the sponge layers a deep, bitter-sweet character that cuts through the richness of the cheese.
- Zero Fondant Philosophy: Like all my cakes in Kharghar, this dessert is strictly zero-fondant. You get pure flavours, not sugar paste decorations.
