About Indian Fusion Cakes
When you order a Rasmalai cake, you aren't just getting sponge and cream. I build these with a specific saffron-infused sponge ratio that balances the moisture of the rabdi without making the base soggy. Because I bake only after you order, I can adjust the sweetness level or the quantity of rasgullas if you have a specific preference for your celebration.
My approach to fusion is simple: I don't just put mithai on top of a cake. I deconstruct the flavors of classics like Rasmalai and Gulab Jamun and integrate them into the cake's DNA. The saffron sponge needs to be firm enough to hold the weight of the rabdi, yet soft enough to melt away. This is why I use fresh cream exclusively. It complements the richness of Indian sweets far better than heavy sugar-paste fondant, which I avoid entirely.
