My chef is preparing a large Paneer Chilla, a savory Indian pancake made from lentil batter. He expertly spreads the batter, adds a generous stuffing of spiced cottage cheese, and folds it into perfect triangles.
This is a live station for a creative South Indian dish. The chef uses bell pepper rings as a mold on the hot griddle, filling them with a savory mixture before adding the batter for a unique presentation.
Here we are preparing live steamed dim sum. The dish is cooked traditionally in a large brass pot sealed with cloth, ensuring the dumplings are perfectly soft and flavorful when served.

Perfect for a winter wedding, this is our live Kadhai Milk station. We simmer fresh milk for hours in a large kadhai with saffron, cardamom, and nuts until it's thick, creamy, and fragrant.
