This is my Kichiya Pasta Fusion, a unique appetizer that combines Italian and Indian flavors. A staff member assembles the dish in a small cup, layering crispy kichiya papad with a creamy pasta sauce.

My chef preparing a serving of Shahi Dahi Wada. The soft lentil fritters are soaked in sweet yogurt and then garnished with tangy tamarind chutney and spices, served in a traditional clay bowl.

When we set up our live chaat stations, we do not simply put out pre-plated dishes. Our chefs assemble every bowl in front of your guests, which ensures the crispy elements stay crunchy and the hot items arrive at the right temperature. Whether it is the lava dhokla or our deconstructed dabeli, that preparation time is a core part of the experience.
