When we cater a destination wedding, the biggest hurdle is recreating that 'ghar jaisa' (home-style) taste. We don’t rely on local suppliers for our regional specialties. My team carries our secret ground masalas, specific paneer, and even our own clay pots from our Mumbai base kitchen. It is the only way to ensure the Banaras Malaiyo or Tamatar Chaat tastes exactly as it should, whether we are serving guests in Udaipur, Thailand, or closer to home in Mumbai.
