About Behind The Scenes: Our Process & Promise
Before we serve a single dish at your wedding, my team and I run a full mock setup. We do not just taste the food. We test the crockery, the staff uniforms, and the exact flow of the buffet service. It is essentially a trailer for your wedding day, so you know exactly how the presentation will look and feel when your guests arrive.
Luxury catering is often invisible. You see the perfect plate, but you do not see the 1200-person operation behind it. For destination weddings in locations like Turkey, Thailand, or the UAE, we treat logistics like a military operation. We carry our own paneer and secret ground masalas from India because those are the pillars of the flavours your guests expect. Nothing is left to chance.
My process starts in our Mumbai kitchen, where we iterate on recipes until they pass my own rigorous tasting. If a dish is not good enough for me, it simply does not go on your menu.
Why Our Process Matters
- The Food Committee: We invite the family to join our tasting sessions. This is the best way to handle dietary requirements—whether it is 'mera pani wala chai' for the elders or specific Jain options.
- Staff Discipline: We treat the service team with the same level of care as the food. Pre-service briefings are non-negotiable. Every server knows the menu, the ingredients, and the seating chart.
- Quality Control: My process is simple. I taste everything from the smallest chutney to the last dessert before it hits the buffet line.
