When we design a sit-down dinner or high-tea, my priority is timing and temperature. For a seven-course meal, my team executes synchronized service where every plate hits the table at the exact same moment. For high-tea, we build the grazing spread to be visually stunning yet easy for guests to navigate without feeling overwhelmed, ensuring the live stations remain fresh throughout the afternoon.
Fine dining is not just about the food; it is about the flow. When you hire us for a seven-course sit-down dinner, you are hiring a team that understands the rhythm of an evening. We maintain a butler-to-guest ratio of approximately 1:5, ensuring that while you are speaking with your guests, your needs are met before you even have to ask. Every plate is individually prepared, and my kitchen follows a strict QC process before any dish leaves the pass.
For high-tea and grazing spreads, the challenge is different. It is about creating an environment that encourages movement and conversation. We avoid overcrowding the tables. Instead, we use tiered presentation and thematic props to create height and interest. Whether it is a winter-themed grazing table with imported cheeses or a summer high-tea with fresh fruit and iced teas, the menu is designed to be substantial enough to count as a meal, not just a snack.
I handle the logistical planning personally. If you have guests with specific dietary needs, such as Jain or vegan requirements, we do not simply serve them a separate plate from a generic menu. We adapt the entire course to fit their needs so they feel included in the experience. We operate from our base in Mumbai but travel across India and internationally for destination events, bringing our own secret spice blends and equipment to maintain the quality I demand. You will never find me handing off the tasting to an assistant. If it is on your menu, I have already tasted it, refined it, and approved it.
