Just a few of the different chocolate bonbons I learned to make during my training. From the colorful, glossy shells to the variety of fillings inside, each one is a tiny drop of heaven.
This is how my fudgy brownies get made for large orders. After baking and cooling, each brownie is individually wrapped and labeled, making them perfect for event giveaways or corporate gifts.

I use 100% premium couverture chocolate for my bonbons, which gives them that satisfying snap when you bite in. For my brownies, I bake them in controlled, smaller batches to ensure the centers stay dense and fudgy rather than turning into cake. The Craft Behind The Chocolate
Tempering chocolate is science, not magic. Whether it is a dark chocolate ganache or a fruit-based gel, I focus on getting that ultra-thin shell with a crisp snap. The glossy finish you see on my bonbons comes from painting each mold with colored cocoa butter before pouring in the couverture chocolate.
Why Fudgy Brownies Matter
I do not do cakey brownies. You will find dark chocolate chunks in mine, with that distinct crackly top that separates a good brownie from a standard one. Since I wrap them individually, they stay fresh longer, making them a reliable choice for corporate events or school celebrations where you need everything to look clean and professional.
