These are called travel cakes, and they are perfect for when you need a dessert that is delicious and easy to transport. This video shows a variety I made, including chocolate basque, red fruits voyage cake, and cherry hazelnut cheesecake bars.
Sometimes the simplest cakes are the most meaningful. I made this tiramisu-style cake for a special Mother's Day order, with creamy mascarpone, coffee-soaked layers, and a dusting of cocoa powder.

Why Travel Cakes?
When I trained at APCA, I fell in love with the concept of the 'travel cake'—desserts that don't need refrigeration to survive the journey and keep their texture for days. Whether you are ordering a Cherry Hazelnut Cheesecake bar or a classic Chocolate Basque, these are designed to be practical without compromising on the flavour.
My Approach
Everything I make, from the flaky tarts to the panna cotta, follows the techniques I learned during my pastry training. It is not just about dumping ingredients into a bowl; it is about the snap of a chocolate shell or the specific glaze on a fruit loaf. I use 100% pure dairy butter and premium cocoa because, in baking, the quality of the raw material is everything.

Most of my menu can be made eggless if you prefer. Just let me know when we chat.
