I do not use massive factory crushers because heat destroys the natural oils in spices. Instead, I hand-roast and stone-grind every batch in my kitchen, so when you open a packet, you get that intense, raw aroma that usually only comes from a mortar and pestle. You will notice the difference immediately in how much less masala you actually need for your curries.
When I started Khat Mitthi, my goal was simple, to recreate the exact taste of the masalas my grandmother used to make. Commercial spices often sit in warehouses for months, losing their potency and essential oils. By contrast, my spices are prepared in small batches, right here in my kitchen in Sector 76, Noida. I insist on sun-drying ingredients because it is the most natural way to remove moisture without cooking away the nutrients or the flavor.
Whether you are using my haldi (turmeric) which is rich in curcumin, or my signature Panch Phoron blend, you are getting raw, unadulterated ingredients. I have stripped away all the fillers like starch, artificial colors, and anti-caking agents that you find in supermarket brands. This means the powder is more concentrated, so a pinch goes a long way.
My recipes are not invented; they are inherited. From the specific ratio of whole spices in my Chai Masala to the hand-pounded red chilli powder, every product is a reflection of the techniques passed down through my family. I keep the texture slightly coarse, especially in my stone-ground blends, to ensure that the spices release their flavors only when they hit your hot oil or boiling water.
