My masalas aren't like the ones you find on store shelves. I use low-heat, cold-grinding methods to make sure the volatile oils stay locked in, so you get more flavor with just a single pinch. When I started Khat-Mitthi, I wanted to bring back the ghar ka swaad that gets lost in factory-made packets. Most commercial masalas are ground at high speeds, which creates heat friction and burns off the natural oils that actually carry the flavor. That is why they often taste flat and dull.
My Process: From Farm to Jar
I treat every spice with patience, just like my grandmother did:
- Sun-Dried & Hand-Sorted: Before anything goes into the grinder, I make sure the raw spices are cleaned by hand. You won't find stems, stones, or dust in my packets.
- Low-Heat Grinding: I use specific low-speed pulverizers that keep the temperature below 120 degrees Celsius. This preserves the essential oils and the natural color, so you get vibrant, potent spices.
- No Shortcuts: No added starch, no anti-caking agents, and definitely no artificial colors. It is just the raw spice powder, exactly as nature intended.

Because my masalas are coarse-ground and packed with their natural volatile oils, they are incredibly aromatic. You will notice that you need significantly less masala to season your dal or sabzi compared to store-bought brands.
