About Dadi Maa's Special Spice Blends
You will notice the difference the moment you open the pouch—these blends are not fine dust. Because we hand-roast and stone-grind everything in small batches, you get a coarse, aromatic mix where you can actually see the texture. This means you need significantly less for every dish; a single pinch is usually enough to replace a whole teaspoon of store-bought alternatives.
Why these blends taste different
Most store-bought spices are mass-produced using high-speed grinders that heat up the spices, burning away their natural volatile oils. Our process is slower. We hand-roast whole spices like cloves, cinnamon, and cardamom in small quantities to unlock their essential oils, then stone-grind them to maintain that coarse, textured finish.
Our signature blends
- Garam Masala: We call this our 'Masala King.' It is the foundation for everything from a simple aloo gobhi to a rich meat curry. Because there are no bulking agents like starch or coriander powder, it is highly potent.
- Chai Masala: This is not just ginger and cardamom. It is a balanced mix designed to lift your morning tea, giving you that refreshing kick without overpowering the chai itself.
- Panch Phoron: A staple in our kitchen, this five-spice mix is perfect for tempering, or tadka. It brings out an earthy aroma in dal and vegetables that you simply cannot replicate with generic masalas.
How to store and use
Since these are 100% natural and preservative-free, they are sensitive to moisture. Keep the pouches sealed tightly using the ziplock provided. Because they are so potent, start with a smaller quantity than your usual recipe suggests and adjust to taste.
