When I talk about my plum cakes, I mean it—every batch spends at least four to six weeks maturing in premium rum and brandy. You do not get a quick bake here, you get the result of a month-long process that ensures the spices, fruits, and spirits develop the deep, authentic flavour that shortcuts simply cannot replicate.
My From-Scratch Promise
Baking is a science, and during the Christmas season, that science requires even more precision. I do not use premixes or preservatives in my kitchen. Whether it is the classic Plum Cake or a batch of gingerbread men, everything is made from real butter, fresh flour, and high-quality ingredients. It is more labour-intensive, but it is the only way to get that authentic, old-school taste.
