Hi, I am Rushina Mehrotra, head pastry chef at Daffodils Patisserie. In this video, I explain what makes a French entremet so special. It is a multi-layered experience where every layer, from the soft mousse to the crunchy praline, is designed with intention.

Behind every entremet is a story of artistry and the finest ingredients. This video shows the process, from making airy sponges and silky crémeux to creating glass-like mirror glazes. At my patisserie, I do not just make entremets, I create an experience.

My favorite days in the kitchen are production days. It is a hustle from start to finish, making fresh compotes, pralines, and mousses. It is exhausting, but there is a real sense of satisfaction seeing all those elements come together.

Let me take you behind the scenes on a busy weekend. The ovens are running non-stop, cakes are being layered, and my team and I are working on delicate decorations. It is a challenge, but we always make it work to bring your dream cakes to life.

You will see the precision that goes into maintaining temperatures in our kitchen. From the moment our mirror glaze hits the mousse to the second it is sealed in temperature-controlled packaging for delivery, we are obsessing over details to ensure that the delicate layers do not collapse before they reach your table in Mumbai.

Creating a French entremet is a delicate balancing act. It is not just about the final shine of the mirror glaze. It starts with sourcing. We use Belgian chocolate, roasted Turkish nuts, and real fruit compotes because synthetic alternatives simply do not hold up or taste right in a multi-layered dessert.

Each entremet is constructed with a specific sequence in mind. We lay down a rich brownie or biscuit base, followed by a light mousse, and then the core insert, which might be a tangy fruit compote or a silky hazelnut praline. The challenge lies in the physics of it. Each layer must be set to the exact right consistency before the next is added. If the mousse is too soft, the layers bleed. If the praline is too hard, the bite is uneven.

Then there is the logistical hurdle of our Mumbai climate. We use cavity boxes and dry ice for transport because mousse is highly sensitive to heat. We treat every order as a logistical project, ensuring that the cake you see on our website arrives at your door looking exactly as it did when it left our chiller in Andheri. It is an exhausting process, but seeing these elements come together is exactly why we do it.
