We strip away the noise to focus on one thing: the ingredient. Join our workshops in our sunlit Shanti Nagar glasshouse to explore the science, history, and flavour profiles of the food you eat.

Our 'Mushroom Matchmaking' workshop is designed to introduce you to the vast and delicious world of fungi. This poster features a bowl of diverse mushrooms, including shiitake, portobello, and nameko, inviting you to find the perfect match for your next recipe.

The beauty of mushrooms is in their variety. Here, delicate pink and white oyster mushrooms are artfully arranged on colorful plates, showcasing the visual appeal and unique forms we explore in our fungi-focused culinary sessions.

A closer look at dried shiitake mushrooms, a staple in many cuisines. In our workshops, we delve into how different preparation methods like drying can concentrate flavor and transform the texture of ingredients.

We celebrated India's grain diversity with a special breakfast from Loafer & Co. This poster captures the spirit of the event, showcasing the baker behind the bread and his passion for pairing global techniques with local, sustainably grown grains.

India's grain heritage is unmatched, from countless varieties of wheat and rice to ancient millets. This image shows a beautiful assortment in burlap sacks, representing the focus of our collaboration with Loafer & Co. to celebrate our nation's agricultural bounty.

This is the Goan poee, a soulful whole wheat bread that's a cross between sourdough and pita. In our Poee Sandwich Shop pop-up, we took this humble bread and made it the star, stuffing it with delicious fillings for a modern take on a Goan classic.

This is what "human strength noodles" look like in the making. The chefs from Fifty Tales demonstrate the incredible effort and skill that goes into stretching and cutting their signature 'ren li mian' by hand for their Malaysian Chinese pop-up.

About Ingredient Deep Dives

When you join our Ingredient Deep Dives in Shanti Nagar, don’t expect a standard cooking demo. Whether we’re profiling single-origin chocolate with Manam or exploring fungal varieties with Shroomery, our goal is to get your hands messy and your palate trained. You will leave with a technical understanding of the ingredients—and enough knowledge to change how you source and cook them at home.

We build our sessions around the raw elements of cooking. Our workshops are designed for those who want to know why a cookie tastes different with ghee, or what makes a miso fermentation active. You spend 90 to 120 minutes with industry experts—chocolatiers, farmers, or cheesemongers—who bring their materials into our glasshouse.

Sessions range from theory labs to practical tastings. You might find yourself analyzing flavour wheels at a cacao profiling session or understanding the specific conditions that produce the best nameko mushrooms. We don't just lecture; we provide a flight of 5 to 8 distinct samples to compare side-by-side. You receive recipe cards, tasting guides, and the chance to ask questions that you’d never get to ask at a grocery store or standard restaurant.

Whether it's learning the difference between ancient wheat varieties with Loafer & Co. or participating in a chocolate meditation, these sessions are about building a library of flavours in your mind. You aren't just a diner here; you are an active participant in the story of the food you eat.
