The process begins with curation and ideation. We spend time researching and brainstorming the who, what, when, and where of each event to ensure every experience we host is unique and thoughtfully planned.
The final step before we open the doors: the tasting table. This is where we put all the flavors to the test, ensuring every dish on the menu is perfect and ready for our guests.
About How It Comes Together
Before any guest walks in, we hold our 'tasting table' sessions. This is where the guest chef and our team stress-test every dish, adjusting acidity, texture, and plating until the rhythm of the meal feels right. It is not just about cooking; it is about ensuring that when you sit down in our Shanti Nagar glasshouse, the story on the plate lands exactly as we intended.
The Blueprint of a Pop-Up
Our process begins long before the first guest arrives. It starts with an idea, often born from a chef's specific obsession, whether that is the perfect fermentation of miso or the heritage of a specific grain. We spend weeks in conversation with our collaborators, stripping back the menu to its core narrative.
The Testing Phase
We don't believe in recipes that haven't been lived in. During our internal testing phase, we act as the first audience. We look for the gaps in the experience: Is the pacing too fast? Does the plating allow for conversation? We adjust ingredients, swap ceramic ware, and even tweak the lighting until the flow feels natural. This is the lab work that defines our events—it is quiet, detailed, and completely necessary for the 'theatre' to work.
