About Gluten-Free & Low-Carb Cakes
Because I use pure almond flour and Erythritol instead of wheat or refined sugar, these cakes are much denser and more satisfying than the usual airy, flour-loaded stuff. They need to be stored in the fridge to keep the crumb and structure perfect, so do not leave them out on the counter too long before you dig in.
Many people think eating healthy or managing a diabetic diet means resigning yourself to joyless, tasteless food. That is a myth I am obsessed with busting. When I bake a gluten-free or low-carb cake, I am not trying to mimic the texture of a standard maida-based sponge. I am building something entirely different.
The base is always 100% almond flour. This gives a rich, nutty depth that pairs perfectly with high-quality Belgian chocolate or house-made fruit compotes. For sweetness, I rely exclusively on Erythritol. I stay away from Maltitol, aspartame, or any of those shady fillers that leave a chemical aftertaste. If it is on my menu, it is genuinely low-glycemic.
Since there is no gluten to hold the structure together like a traditional bakery cake, the crumb is tighter. It is meant to be enjoyed in smaller, more satiating portions.
