You might notice the delicate foam on my Ms. Monroe mocktail—that is a vegan aerated layer we whip up to give it a silky, cocktail-like texture. It is not just about mixing juices; it is about balancing litchi, raspberry, and kaffir lime so the drink evolves as you sip it. It is designed to be as complex and satisfying as any alcoholic drink, just without the buzz.
At Camillo’s, I believe a drink should be a moment of pause, not just a way to wash down a meal. My approach to mocktails is the same as my approach to pizza: respect the ingredients, balance the heat with the sweet, and don't take shortcuts.
