One thing to consider is the finish: are you leaning toward sugar flowers or buttercream blossoms? Sugar flowers are wired, delicate, and often kept as mementos, whereas buttercream blooms are lush, softer, and completely edible. I can help you decide which finish best suits your event, especially if you're planning a multi-tier structure for a large milestone.
At Cake It Easy, I view flowers as the bridge between a simple cake and a true centerpiece. If you're looking for that heirloom quality, I work with gum paste to create wired, intricate sugar flowers like moth orchids or delicate blossoms. These take time to dry and set, so they are perfect if you want to keep a part of the cake topper as a memento after the party.
Alternatively, if you prefer a classic, indulgent feel, I use buttercream piping. My technique relies on precision—I use a touch of violet to neutralize any yellow in the buttercream to achieve a perfect, clean white or pale pink base. This ensures your floral roses or rosettes stand out with the right colour depth. Whether it's a 50th-anniversary cake that demands gold accents or an engagement piece requiring a specific colour palette, the focus is always on the 'story' of your celebration.
Logistically, keep in mind that since everything is made fresh in my Malleswaram studio, pickup requires care. Floral cakes, especially those with fondant or sugar work, are sensitive to heat and moisture. A car with AC is mandatory for transport to ensure those petals stay pristine until they reach your venue.
