We do not use dummy cakes here. In my studio, you will work with real sponges and fresh buttercream from day one, so you understand exactly how ingredient ratios, texture, and temperature affect your final design.
When you step into my studio, my goal is for you to move from 'I wish I could do that' to 'I made that.'
My workshops are strictly hands-on because you cannot learn structural engineering or piping consistency by watching a video. Whether we are practicing sharp edges on a ganache-covered cake or modeling fondant figurines, you are doing the mixing, the stacking, and the decorating yourself.
I keep my batches intimate, limited to 1 to 3 students, to ensure that I can guide you through every troubleshooting step. We cover the foundational baking science—understanding why a sponge rises or how to fix a split cream—alongside advanced design techniques like palette knife painting and structural support for tiered cakes. By the time you leave, you will have a set of finished products and a toolkit of techniques that work in your own kitchen, not just in my studio.
