My all-time favourite pineapple cake, ready for a birthday party. This rectangular cake is topped with plenty of pineapple chunks and has a light, fluffy texture that's always a hit.

A beautiful semi-naked cake, which is a vanilla genoise sponge with vanilla buttercream and fresh strawberries. The style shows the layers of the cake, and it's topped with a piped buttercream rose.

About Fruity & Fresh Flavours

When I bake a fruit cake, you won't find heavy sugar syrup soaking the sponge to hide a lack of depth. I layer fresh, seasonal fruit chunks with light whipped cream. For my apple cinnamon cake, I actually saute the apples myself before they go into the layers—it takes extra time, but it makes the flavour much warmer and more authentic than store-bought alternatives.
