About Fruity & Fresh Flavours
When I bake a fruit cake, you won't find heavy sugar syrup soaking the sponge to hide a lack of depth. I layer fresh, seasonal fruit chunks with light whipped cream. For my apple cinnamon cake, I actually saute the apples myself before they go into the layers—it takes extra time, but it makes the flavour much warmer and more authentic than store-bought alternatives.
I believe that the best cakes are made with simple, honest ingredients. Whether it is a light vanilla genoise with fresh strawberries or a classic red velvet, every cake is baked in my home kitchen only after you place your order.
My Approach to Fresh Flavours
My fruit cakes are designed to be light and balanced. Because I do not use commercial preservatives or stabilizers, I rely on the natural sweetness of high-quality seasonal fruits. For my pineapple cake, I use generous amounts of real fruit chunks rather than just a flavored cream, which gives the cake its signature fresh taste.
The Apple Cinnamon Experience
This is one of my personal favourites for intimate celebrations. The cake involves slow-cooking apples in a cinnamon-caramel base before layering them into the sponge. It brings a comfort-food quality that works perfectly for cozy family gatherings or milestone anniversaries where you want something a little different from the standard party cake.

Because I bake from scratch without pre-mixes, I cannot do last-minute orders. I need at least 48 hours of notice to source the best fruit, prepare the sponges, and ensure the frosting sets perfectly.
