About Fresh Fruit & Unique Flavors
For my fruit cakes, I don't use canned fillings or syrupy preservatives. I source seasonal fruits like fresh mangoes, strawberries, and figs to ensure every slice has that natural, garden-fresh bite. If you are picking a fusion flavor like Rasmalai or Kaju Katli, I prepare the sweets in small batches to make sure the texture stays perfectly balanced with my light whipped cream frosting.
My Approach to Freshness
I believe a cake should be as light as it is tasty. That is why I use a non-dairy whipped cream frosting for all my fresh fruit and fusion cakes. It is stable enough to handle our local weather while keeping the cake moist and not overly sweet.
