About this collection
I do not use canned fruits or heavy syrups that mask the natural taste. When you order a fruit cake, you get fresh cuts sourced from the market, layered between my signature fluffy vanilla sponge. If you choose the Mango Rasmalai, I soak the sponge in authentic rasmalai milk before adding fresh mango chunks, so every bite feels like a fusion dessert rather than just a standard cake.
How I keep it fresh
Keeping it simple is my secret. Whether it is a Strawberry Fraiser or a Mixed Fruit blend, the goal is balance. I use a light whipped cream that does not overpower the tartness of fresh strawberries or the sweetness of mangoes.
Eggless perfection
Everything here is 100% eggless. I have spent years perfecting a sponge recipe that stays moist even without eggs, which is vital when you are adding juicy fruit layers that could otherwise make a cake soggy.
Serving and storage
Since these cakes rely on fresh produce, they taste best when served chilled. If you have leftovers, store them in the fridge, but try to finish them within 24 hours to keep the fruit firm and the sponge fresh.
