About Seasonal Fruit Collection (Mango & Strawberry)
I source my Alphonso mangoes and Mahabaleshwar strawberries only when they are at their absolute peak, meaning I never rely on frozen pulp or synthetic syrups. Because my ingredients dictate the timeline, my seasonal menu changes as soon as the produce quality drops, ensuring every bite captures that fleeting, intense natural sweetness.
My seasonal collections are about pairing the right intensity with the right base. For my mango desserts, I pair the floral notes of fresh Alphonso mangoes with a rich 54 percent Callebaut white chocolate to balance the sweetness. With strawberries, I lean into the acidity, pairing fresh Mahabaleshwar berries with a deep Belgian dark chocolate ganache. All of this is layered on my signature egg-free sponge, ensuring the structure holds up even with all that juicy fruit. I do not believe in over-processing. Whether it is a layered cheesecake tub or a tart, the fruit is the star. Because I do not use preservatives, these are best enjoyed fresh. If you are planning a party, reach out early in the week.
