There is something about a perfectly made eclair or a coffee-soaked tiramisu that just hits the spot. Here are my favourite French classics and timeless bakes, prepared fresh every morning at our Nerul cafe.

A spoonful of our beloved Tiramisu. Layers of coffee-soaked ladyfingers and creamy mascarpone, dusted with cocoa powder. It's the perfect pick-me-up.

About this collection

When I say I make these classics, I mean I start at 5 a.m. to get the texture right. Our Tiramisu is a permanent favourite for a reason, as it is light, balanced, and completely eggless, ensuring everyone gets a slice of the action.

I believe that the beauty of French pastry lies in the details. You cannot fake a good St. Honore or a proper Eclair. For us, that means using real couverture chocolate instead of compound alternatives, and ensuring our choux pastry is baked just right so it stays crisp but airy.

My approach is simple: Seedhi baat, no bakwaas. If I am making a Roasted Almond Eclair, you will taste real almond cream, not some artificial flavouring. We focus on small batches because that is the only way to keep the quality consistent. If you see a Tiramisu tub on our shelf, it was assembled with fresh, premium ingredients that same morning.

We have adapted many of these classics to be eggless without losing that authentic mouthfeel. It took a lot of trial and error in the kitchen to get the crumb and cream balance right for our eggless Red Velvet and Tiramisu, but seeing the feedback makes the early mornings worth it.
