We use high-fat, premium butter folded into our dough multiple times to create dozens of microscopic layers. When baked, the water in the butter evaporates, pushing the dough layers apart to create that iconic, airy honeycomb structure. If you pull one apart, you should see those delicate, lacy layers—that is our stamp of quality.
