Real, high-fat butter is the secret to our pastry. We laminate our dough repeatedly to create those distinct, airy honeycomb layers inside, ensuring you get that satisfying crackle on the outside and a soft, buttery chew on the inside—never a bready center.
The Art of the Perfect Laminate
Many places mistake a croissant for just a crescent-shaped roll, but the difference is in the lamination. We use high-fat, premium butter folded into our dough multiple times to create dozens of microscopic layers. When baked, the water in the butter evaporates, pushing the dough layers apart to create that iconic, airy honeycomb structure. If you pull one apart, you should see those delicate, lacy layers—that is our stamp of quality.
