When I design these appetizers, my priority is balance. I want each bite to be bold and exciting, but never messy. Whether it is our signature Avocado Mousse Chaat served in phyllo cups or skewers that make mingling effortless, everything is engineered to look beautiful on a plate while being practical for your guests to enjoy while chatting.
My approach to appetizers is simple: they must look distinct and taste even better. The goal is to start your event with a flavor profile that guests actually talk about. I focus on creating a mix of textures and temperatures, like a Crispy Stuffed Ravioli paired with a slow-cooked tomato relish, to ensure the palate stays engaged throughout the cocktail hour.
Fusion is a major part of what I do. Take the Mango Paneer Tikka for example. By blending the sweetness of fresh mango with the smokiness of a classic tandoor, I transform a standard starter into something people remember. I also place a heavy emphasis on mess-free dining. For events with lots of mingling, I suggest our flying buffet style where appetizers are served on slate platters or shot glasses, making it easy for guests to eat while holding a drink.
