Freshly Made Chutneys & Thokkus
These are the chutneys I grew up eating, slow-cooked in my own kitchen using fresh ingredients like ginger, coriander, and tamarind. No preservatives, just the authentic tang and warmth of home.
A preview of my Kothmiri Thokku, showing the fresh ingredients that go into it. You can see the green chillies, tamarind, and jaggery that create its unique spicy, tangy, and sweet flavour profile. It’s a taste of tradition in a jar.
I am excited to introduce my Allam Pachadi, or ginger chutney, soon. Here you can see the key ingredients like fresh ginger, red chillies, and tamarind that give this classic South Indian chutney its signature tangy and spicy taste.
About Freshly Made Chutneys & Thokkus
Unlike factory-made versions, my thokkus rely on a slow-reduction process with tamarind and jaggery to balance the spice. Because I do not use chemical preservatives, I suggest keeping these in the fridge to maintain that fresh-ground taste and aroma once you open the jar.
How I Make My Thokkus
Cooking a good thokku takes patience. It is not just about blending spices; it is about slow-cooking the base until the oil separates naturally. For my Kothmiri Thokku, I focus on balancing the sharp bite of fresh green chilies with the mild sweetness of jaggery and the tang of tamarind. It works perfectly as a spread for rotis, a quick mix for hot rice, or even as a dip for your evening snacks.
My Allam Pachadi uses fresh ginger, which adds a distinct zing to any breakfast. Whether you are serving it with idli, dosa, or simply stirring a spoonful into yogurt for a quick raita, it brings a familiar, comforting flavour to the table.
Quality You Can Taste
- Small Batches: I prepare these in limited quantities to ensure every jar retains the depth of a home-cooked meal.
- Natural Preservation: By using high-quality oil and proper slow-cooking techniques, I avoid the need for artificial preservatives.
- Premium Ingredients: From farm-sourced ginger to high-grade tamarind, I only use what I would serve to my own family.
- Packaging: Everything comes in sterilized glass jars, which keeps the flavours intact and makes it easy to store in your pantry or fridge.
These are not just accompaniments; they are a bridge back to the taste of home. If you want to elevate a simple meal, a dollop of fresh ginger or coriander chutney makes all the difference.
