About Dried & Smoked Umami
These dried and smoked ingredients serve as the flavour base for your curries and chutneys. When using the dried small fish or shrimp, a quick soak in warm water helps rehydrate them and releases the full umami profile before you add them to your pan.
How to use these ingredients
These items are not meant to be eaten as standalone snacks. They provide the deep, pungent flavour profile essential to many Northeast Indian recipes.
- Wood-Fired River Fish: These are dehydrated over wood fire, giving them a specific blackened skin and smoky flesh. Use these in curries where you need a strong, smoky depth that fresh fish cannot provide.
- Sun-Dried Small Fish: These are the standard for spicy chutneys. You can fry them until they are crispy as a side dish or grind them down to thicken and flavour your stews.
