About Authentic French Macarons

Most macarons rely on commercial premixes or heavy stabilizers, but we do it the traditional way. Our shells are made strictly from pure almond flour, which gives them that essential crisp exterior and chewy bite. Because we use fresh fruit ganache and real buttercream instead of synthetic fillings, these treats are delicate and best enjoyed fresh, the way they were intended.

The Science of the Shell

Creating a proper macaron is an exercise in patience and precision. We avoid the common industry shortcuts like synthetic almond essence or pre-mixed dry bases. Instead, we use high-quality almond flour, which provides the structural integrity required for the shell to be crisp on the outside while remaining tender and chewy within. This is not just a cookie; it is a balance of texture and air.

Why We Avoid Synthetic Fillings
