About Artisanal Chocolate Bars & Dragees
Unlike mass-produced snacks that use vegetable fats, every bar and dragee we make relies entirely on pure cocoa butter for that signature melt. Because we avoid hydrogenated oils, our chocolate is temperature-sensitive, which means you should store it in a cool, dry place to maintain the tempered sheen and snap you expect from authentic couverture.
Most chocolates you find on standard shelves are made using compound coatings, where cocoa butter is replaced by vegetable oil to keep costs low and extend shelf life. At L'inouï, we reject that approach. We use only Belgian couverture chocolate, which contains a high percentage of cocoa butter. This ensures the chocolate tempers correctly, giving our bars that satisfying snap when you break them and a smooth mouthfeel as they melt.
Our dragees follow this same philosophy. We take whole, roasted almonds and coat them in layers of pure dark or milk chocolate, then finish them with a light dusting of cocoa powder. There are no synthetic waxes or gloss agents used to artificially shine the surface. Because we do not use preservatives, the flavour profile remains clean and intense.
