About this collection
Everything here is made to order, so please plan ahead. Since I don't keep stock on shelves, I need 24-48 hours to source the best 54.5% Callebaut chocolate and get your batch perfectly baked. It ensures you are getting a fresh, chewy treat, rather than something that has been sitting in a display case.
My approach to brownies and cookies is simple: start with high-quality fat and chocolate, and do not overbake.
The Chocolate Difference
I use 54.5% Callebaut dark chocolate for all my brownies and cookies. You will taste the difference in the depth of flavor. It is not just about sweetness; it is about that complex, lingering cocoa note that only good Belgian chocolate provides.
Texture Matters
- Brownies: I aim for a dense, fudgy center with a signature crinkle top. If you prefer a bit of crunch, the walnut variants offer a nice contrast to the soft crumb.
- Cookies: My NYC-style cookies are designed to be soft in the middle. I use a mix of chocolate chunks and chips to ensure you get a molten chocolate pocket in every bite. Whether it is a double chocolate chunk or a buttery vanilla almond, they are best enjoyed slightly warm.
