Sunny Summer Bakes & Fresh Fruit Cakes
When the Mumbai sun is out, it is all about fresh fruit and cooling flavours. From mango-loaded cheesecakes to playful watermelon-themed sponges, here are my favourite ways to beat the heat with something sweet.
You can almost taste the sunshine in my seasonal mango cheesecake. I use a creamy, rich filling and top it with a vibrant mango glaze and fresh mango rosettes for the perfect summer dessert.
This watermelon cake is one of my most requested summer designs. It's perfect for summer parties and birthdays, with a bright red and green buttercream exterior and strawberry cream filling inside.

These cakes use fresh, seasonal produce like Ratnagiri Alphonso mangoes and strawberries, which makes them much lighter on the palate than standard bakes. Since I avoid artificial preservatives, these treats need to be kept chilled, so I always suggest timing your pickup or delivery as close to your celebration as possible to keep the cream and fruit at their best.
Summer in Mumbai calls for a different kind of cake. When the temperature rises, I move away from dense, heavy frostings and focus on what the season offers best.
Why I Love Seasonal Summer Bakes
I treat my summer menu like a limited-edition collection. Because I source fresh mangoes and strawberries, these items are only available when the fruit is at its peak quality.
- Mango Cheesecakes: I use a biscuit crumb base paired with a rich, set cream cheese filling, topped with fresh mango rosettes and a vibrant glaze. It is refreshing, tangy, and never overly sweet.
- Watermelon Sponges: These are a huge hit for kids' parties. I use a light vanilla sponge and layer it with a strawberry cream filling, decorated with colours that capture the summer vibe without being heavy on the stomach.
A Few Practical Tips
Since these are fresh cream cakes, they are more delicate than fondant designs. If you are picking up from my Chembur West kitchen, I recommend keeping your AC running in the car for the ride home.
