When I plate a meal, it is about controlling the experience from the first appetizer to the final dessert. This approach ensures every guest receives the same high-quality portion, which eliminates the logistical chaos often found in large-scale buffets. It also significantly cuts down on food waste, as we serve specific, balanced quantities designed for a perfect four-course flow.
The beauty of a sit-down meal lies in the pace. For executive board meetings or intimate celebrations, I focus on a structured four-course progression. We start with soups like Roasted Pumpkin or Mushroom Cappuccino to set the tone. The second course introduces a plated salad or appetizer, followed by the main course, where I offer choices like Herb Crusted Chicken or slow-cooked risotto. We finish with a dessert that receives the same artistic attention as the savory courses. My team includes a dedicated Chef de Partie onsite to ensure every dish leaving the kitchen meets my standard for visual presentation and temperature. Beyond the food, I prioritize the table setup. You get fine porcelain, heavy cutlery, and crisp linen napkins, along with printed menu cards for each guest. This service requires a 1:3 staff-to-guest ratio, allowing my team to provide silent, efficient service that keeps your event conversation flowing without interruption.
