Winter brings a specific harvest to our Mithila kitchen. From immunity-boosting Amla to zesty garlic and ginger mixes, these are the traditional seasonal staples made only when the sun is right.

Our Amla pickle is winter's tangy superhero. Packed with Vitamin C for an immunity boost, it's made with pure mustard oil and no preservatives. Perfect with dal-chawal, khichdi, and roti.

For those who love a punch of spice, our Garlic Chilli Mix is loaded with crushed garlic, ginger, and green chillies. It's handmade with pure mustard oil and pairs perfectly with parathas and dal-chawal.

Our Lemon Chilli Mix offers a burst of flavours in every bite. Made with fresh lemons and green chillies, it's slow-aged in mustard oil for a zesty, spicy, and slightly sweet taste.

For those who love real spice, our Spicy Green Chilli pickle is made with fresh green chillies stuffed with flavourful masalas. It's handcrafted in mustard oil for a bold flavour that adds heat to any meal.

About Our Winter Specials

Unlike mass-produced pickles that use vinegar for a quick shelf-life, our winter range is entirely dependent on the intensity of the Mithila sun. Each batch—be it our garlic chilli mix or the amla pickle—is dried on our terrace for 10 to 15 days, allowing the moisture to evaporate naturally so the spices and mustard oil can fully preserve the ingredients. This is why you will notice a distinct, robust flavour that develops only when the ingredients are cured properly through traditional sun-maturation.

Why We Wait for Winter

In our home in Darbhanga, the seasons dictate our kitchen work. Winter provides the perfect, crisp sun required for drying our produce, which is why you’ll find these specific varieties only during these months. We believe that forcing ingredients to mature in a climate-controlled factory takes away the soul of the recipe.

Our Winter Staples

  • Amla (Gooseberry) Pickle: This is our winter superhero. We use fresh, seasonal amla, which is naturally rich in Vitamin C. It’s a tangy, earthy accompaniment that pairs perfectly with warm dal-chawal or khichdi on a cold day.
  • Garlic Chilli Mix: A favourite for those who need a bit of warmth. We crush fresh, pungent garlic and ginger, mixing them with green chillies. The long curing process in pure mustard oil softens the sharpness of the garlic, making it mellow yet spicy.
  • Lemon Chilli Mix: This is all about balance. We use the zest of fresh winter lemons and combine them with the heat of green chillies. It is naturally aged, resulting in a zesty, spicy, and slightly sweet finish that cuts through rich, oily meals.

The 'JhaJi' Process

Every jar you open follows the same parampara (tradition). We don't use machinery to grind our masalas; they are roasted and ground by hand. The ingredients are never chemically treated. We rely on the traditional preservative power of salt, the pungency of mustard oil, and the patience of 15 days of sun-drying.

Because these are small-batch, seasonal products, we often run out of stock once the winter sun fades. If you see your favourite jar available, it means it’s freshly cured and ready to travel to your kitchen.

I’m Kalpana Jha, and for me, the winter months were always about helping my grandmother prep these specific jars on our terrace in Darbhanga. We still use those exact same recipes, waiting for the winter sun to cure each batch perfectly, just like it did in our childhood home.
