When you step into our bakery or browse our gallery, you might notice we don't have dozens of cakes sitting ready on the shelf. This is a deliberate choice. We don't believe in bulk-producing with premixes just to fill racks. Instead, we bake every sponge, whip every ganache, and assemble every layer only after you place your order. This means when you receive a cake from us, it isn't something that has been sitting in a fridge. It is fresh, handled with intention, and crafted specifically for your celebration.
For me, Smee, baking is not a game of andaze (guesswork). After three decades in the kitchen, I have learned that whether it is a simple birthday sponge or a multi-tiered wedding masterpiece, consistency comes from measurement and respect for raw ingredients.
Many commercial kitchens rely on vegetable-based fats, non-dairy creams, and premixed sponges to speed up production. We do the opposite. We use real butter, pure chocolate, and fresh fruit. This makes our cakes taste different—the sponge is denser, the cream is richer, and the flavor profile is cleaner. If the humidity in Mumbai demands an adjustment, we make it by hand, not by hitting a 'fast-bake' button on a factory machine.
