About this collection

When we host guest chefs or travel for pop-ups, the menu is never a simple merger of two styles. It is a new language formed between our signature inventive Indian approach and the distinct philosophy of our partners, such as the bold, heritage-led techniques of Nadodi KL or the modern finesse of Benares. These collaborations are fleeting, limited-seating engagements where we explore the friction and harmony between two culinary worlds on a single plate.

The Art of the Collaboration

We do not look for partnerships that offer mere novelty. We seek creators who share our obsession with balancing tradition and innovation. Whether it is a two-day residency in our Delhi home or a takeover in another city, the preparation begins months in advance with shared research into seasonal ingredients and regional techniques.

Notable Conversations

  • The Nadodi KL Exchange: This partnership brought together two kitchens obsessed with heritage. Dishes like the Lamb Legacy and the Haji Ali-inspired custard apple cream served as the perfect example of how South Indian and Sri Lankan influences could be re-contextualized through our inventive lens.
  • The Benares Residency: Hosting Chef Sameer Taneja allowed us to bridge the gap between London's global perspective and our New Delhi roots. The menu highlighted the evolution of regional Indian classics, notably the Kanyakumari crab served with Kerala istoo and the kathal podimas, proving that distance only deepens the understanding of a shared culinary language.

Why These Menus Change

These collaborative menus are rare by design. They require the full, focused attention of our senior chefs and are often tied to specific seasons, anniversaries, or cultural moments, such as our 15th-year celebration tour across India. Because these dishes are crafted for a specific time and place, they exist as a snapshot of a moment in our kitchen's creative evolution.
