Hyper-Realistic Food Illusion Cakes in Mumbai
Ever seen a cake that makes you crave chaat or a toasted sandwich? I love sculpting cakes that trick the eye and delight the taste buds, turning your favorite meals into sweet, edible surprises.
One plate of Sev Puri, but make it cake. This design realistically mimics the popular Mumbai chaat, with every element from the puris to the sev and chutneys being completely edible.
This isn't a sandwich, it's a cake. I created this realistic grilled sandwich cake using airbrushing for the grill marks and carefully layered fondant for the fillings like cheese, lettuce, and tomatoes.

These designs are all about the details. I hand-carve every sponge to get the shape right, then use airbrushing and custom-made sugar miniatures to match the texture of real food. Whether it is a plate of Sev Puri or a grilled sandwich, I make sure it looks convincing enough to eat, but tastes exactly like your favorite premium cake flavor inside.
Creating food illusion cakes, or trompe-l'œil cakes as they are formally called, is one of the most challenging and fun parts of my work. It starts with selecting the right sponge density that can hold a structure when carved. If it is too soft, it crumbles; too hard, and it loses the fresh-baked taste.
My process involves:
- Sculpting & Carving: I don't just stack layers. I carve the sponge to match the exact silhouette of the item, like the shape of a sandwich or the heap of a chaat plate.
- Airbrushing for Realism: To get that toasted grill mark on a sandwich or the subtle shading on a savory snack, I use food-safe airbrushing. It adds a depth that simple icing cannot achieve.
- Miniatures: I hand-roll and paint sugar figurines to act as the toppings. Those little 'sev' bits on the Sev Puri cake? They are individually shaped and placed to catch the light just like the real thing.
People often ask if these are really cakes inside. Yes, they are. You get the fun of a hyper-realistic visual, but the inside is always a classic flavor like Belgian Chocolate or Red Velvet.
