About Holi Special: Kanji Vada
Because I use traditional fermentation without any synthetic shortcuts, my Kanji Vada requires specific preparation time. I only accept pre-orders to ensure your jar arrives with the perfect level of sharp, mustard-infused tang, ready to serve at your Holi gathering.
My Kanji Vada process is all about patience and tradition. The base is a 1.5-litre jar filled with water fermented using rai (mustard seeds), black salt, and red chilli, providing that signature pungent kick that cuts through the richness of festive sweets. Each jar contains 8 to 10 spongy moong dal vadas that soak up the flavour during the fermentation period.
Since I do not use preservatives or artificial colours, this is a 'living' product. It is essential that you refrigerate it as soon as it reaches you. I prepare these in limited, small batches to maintain the quality my grandmother taught me, which is why availability is strictly limited to the Holi season.
Whether you are in Delhi NCR or getting it shipped, I ensure the vadas are packed securely to reach you fresh. If you are planning a specific Holi celebration, I recommend ordering in advance so I can properly schedule your batch preparation.
