About Kang Festival Khechri
When you order my Khechri for Kang, I make sure the experience feels just like it does back in Eramdam Manipur. Each meal comes packed separately to keep the crispy fritters (Bora) and fresh sides distinct from the warm rice, so you get that perfect texture when you plate it yourself.
The Kang festival, also known as Ratha Yatra, calls for simple, clean, and soulful food. My NCF Khechri is a vibrant yellow savory porridge made from local rice and lentils, slow-cooked until it hits that comforting, thick consistency. What makes it special is the setup: traditional lotus leaves. I include a full spread of authentic accompaniments to balance the meal. You get Usoi Ooti, a thick preparation of bamboo shoots and legumes; Mairen Thongba, a sweet and savory pumpkin curry; and crisp Pakoura Thongba or Bora fritters for that necessary crunch. To cut through the richness of the rice, I always include a side of Kanchi Eromba or spicy Morok Achar. I prepare these in limited batches to ensure quality, so ordering in advance is highly recommended, especially during the festival season.
