My no-bake mango cheesecake is designed for easy entertaining. It has a unique pistachio crust for extra crunch and a creamy, gelatin-free filling spiced with fresh cardamom for an elevated flavor.
For a special celebration, I can shape my mango cheesecake into a heart and top it with this intricate mango rose. It’s a beautiful and delicious centerpiece made with fresh, seasonal Alphonso mangoes.

About Signature Cheesecakes
Since I don't use gelatin, these cheesecakes rely on high-fat cream cheese and patience to set, which is why I need a bit of planning time. They need to be kept chilled right until serving, so if you are picking one up for a party, make sure you have space in your fridge ready to go.
When I switched from architecture to baking, I did not want to just make standard desserts. My cheesecakes are built like a project. I skip the gelatin entirely, which means the structure comes from the quality of the cream cheese and the strict temperature control during the setting process. It takes patience, but the resulting mousse-like texture is worth it.
I play around with textures to keep things interesting. That signature pistachio and sea salt base provides a salty crunch that cuts through the richness of the filling. Then there is the flavor layering, like using Alphonso mango with fresh, ground cardamom. It is a classic combination, but focusing on the quality of the ingredients makes it taste like something you would make at home, if you had the time to process everything yourself.
Because these are delicate and fresh, they live in my fridge until the very last second. If you are ordering for a party, just ensure you have a spot cleared in your refrigerator, as these do not hold up well in the Bangalore heat. Since I hand-finish every order, I prefer 10 days' notice so I can source the best fruits and prep everything properly.
