About Behind the Scenes: My Baking Process
When you order a cake, I start with raw ingredients—flour, butter, sugar—never a box mix. This approach takes time, but it ensures the sponge actually tastes like a real cake. Whether I am piping buttercream roses or hand-sculpting fondant figures, I do it all myself, which is why I strongly recommend pre-booking your date early.
My process is simple: no shortcuts. Since 2014, my kitchen has operated on the principle that baking is therapy, not an assembly line. When you scroll through these photos, you are seeing the result of hours spent measuring, mixing, and decorating.
The 'No Premix' Promise
I know a lot of bakeries rely on industrial premixes to speed up production, but I don't. That is a hard rule in my kitchen. By making every batter from scratch, I have full control over the flavour and texture, whether it is a rich chocolate fudge base for a tiered cake or a light sponge for a bento box.
Designing Your Vision
I love a challenge, but I am also honest about the process. Some designs, like the gravity-defying cakes or complex fondant sculpting, require extra time for the structure to set. If you share a Pinterest board or a rough sketch with me, we will figure out what is doable. I might get a little nervous trying a new design for the first time, but I always put my heart into making it work.
Managing the Rush
Weekends in my kitchen are intense. It is usually just me, lots of piping bags, and a non-stop rotation of cakes. Because I handle everything from the first whisk to the final floral placement, I have a limited capacity for orders each week. If you have a date coming up—especially a weekend—please reach out sooner rather than later.
