About Number & Letter Cakes
Because these shapes are hand-cut from fresh, scratch-made sponges, they don't crumble like mass-produced cakes. I prioritize texture and stability, ensuring each number or letter can hold the weight of the frosting, macarons, and edible flowers without losing its form.
Unlike standard round cakes, number and letter cakes require precision. Since I never use premixes, I control the density of the sponge, which is critical for these shapes. A cake that is too airy will fall apart when you pipe frosting or add toppings. I hand-cut every shape from scratch, which means I can get those clean edges you see in the gallery.
When it comes to decoration, I treat every surface like a canvas. I use premium whipped cream or buttercream, keeping the texture smooth enough to hold delicate details like fresh berries, macarons, meringue kisses, and edible gold leaf. If you have a specific color palette in mind—like the lilac and mint green or classic chocolate and gold—let me know. I can color-coordinate the frosting and toppings to match your event theme perfectly.
Since these are complex to assemble, I suggest pre-booking your slot. Because I am a one-person kitchen, I can only take a limited number of these orders for any given weekend.
