When we prepare our Chettinad menu, we do not simply cook off-site. We bring traditional, cast-iron paniyaram pans directly to your venue. The rice and lentil batter is fermented properly, and our chefs manage the heat on the spot to ensure each bite has that signature crisp exterior and soft center. It is an interactive process that fills your venue with the genuine aroma of curry leaves and ground spices.
Authentic South Indian food relies on intuition and the right heat. We learned this firsthand through our collaboration with the chefs from The Bangala in Karaikudi. They taught us that there is no shortcut to the depth of flavor found in a well-made Chettinad masala or the texture of a proper ghee dosa.
Our approach to this menu is split into two zones. The first is the live kitchen, where we focus on items that lose their integrity if they sit too long. This includes our Paniyaram station, where we prepare batters fresh, and our seafood counter. For our seafood, we maintain strict temperature controls using ice beds and chillers to ensure freshness, whether we are serving Vanjaram Meen Tava-fry or Tiger Prawn Varuval.
The second zone is the flavor foundation. We use high-quality ghee and source our spices carefully, ensuring that every Poriyal, Kootu, and Mandi tastes like it came from a family kitchen rather than a banquet hall. Whether you are hosting a wedding in Bengaluru or a private event elsewhere, we transport the necessary equipment—including our portable tandoor and traditional pans—to recreate that home-cooked intensity.
