About Desi Fusion Cakes
I do not use fondant on any of my cakes. Instead, I rely on the textures of real ingredients—like boondi, roasted nuts, and traditional syrups—to build my designs. When you slice into a Boondi Ladoo or Gulab Jamun cake, you get a balance of classic sponge and familiar festive sweetness that holds its structure without the need for artificial sugar paste covers.
My approach to these cakes is simple: if it does not taste like home, it does not leave my kitchen. I started this journey in my fifties, and I treat every single order like I am making it for my own family.
The Boondi Ladoo cake is a personal favorite. It is a dome-shaped sponge infused with cardamom and saffron, coated in fresh boondi and silver vark. It takes a lot of patience to assemble, but the result is a cake that looks like a giant mithai and eats like a celebration dessert.
For the Gulab Jamun cake, I focus on the soak. The sponge is dense enough to hold the rose-infused syrup without turning mushy. I finish it with a simple sugar glaze and pistachios, so you get a pleasant crunch alongside the softness.
Since I work out of my home in Sector 78, Noida, everything is made fresh to order. I avoid preservatives, which means these cakes are best enjoyed within 2 to 3 days. I deliver across Delhi NCR, or you can pick them up directly from me.
