I’m often asked why I do what I do. These talks and insights are the ‘why’ behind my journey—from finding healing in nature to understanding that food is truly our farmacy.

My take is simple: food is our medicine because nature designed it to heal us. When we eat food the way nature serves it, it contains all the properties of medicine. We don't need to look for cures in a bottle when nature provides the remedy on our plates.

People often confuse "vegan" and "plant-based." The food philosophy is the same: no meat, no dairy. But being vegan is a choice of compassion for all sentient beings. Being plant-based is often focused on health. I turned vegan for my health, but I stay vegan for the joy of compassion.

Being healthy shouldn't feel like a punishment; it must be a joyful part of life. I trained myself to pause and ask, "Nidhi, are you really hungry? Do you really need this?" It took constant practice, but this simple habit of checking in with myself has been the key to mindful eating.

We all engage in emotional eating sometimes, knowing it leads to weight gain and other issues. What helped me was asking three simple questions before eating: Why am I eating this? What good will it do? What are the consequences? This simple check-in can stop an unhealthy choice in its tracks.

The biggest challenge in starting my restaurant was that there was no demand for whole-food plant-based food. I had to create it. Even today, many people know about veganism, but the concept of avoiding all refined products like oil, sugar, and white flour is still new. My mission is to make this healthy way of living understood and accessible.

We get so happy eating sweets, but we forget that what we truly crave is the sugar, not the dessert itself. If you remove the sugar, you wouldn't want a second bite. Natural sweeteners like dates and raisins are wholesome and satisfying in small amounts. The minute you need to eat too much of something, it's a sign that something is wrong with it.

Gandhiji said, "There is enough on this planet for everyone's needs, but not for everyone's greed." This is so true for food. Nature provides everything we need in the form of fiber. When we eat refined foods, we throw away the nutrients and fiber, which makes us eat more. Eating fiber-rich foods like millets, legumes, and vegetables keeps you full and nourished.

We all wear so many hats and often feel burnt out. My secret to keeping my brain sharp and my energy high is raw food. My daily smoothies, packed with nutrients and fiber, are essential. Our brain needs good food, just like it needs water, sunlight, and exercise.

Just one conscious meal can make a huge difference. When you choose a plant-based meal, you are contributing to your own health, showing love for animals, and helping create a safer planet. When we act from this powerful intention, we start finding alternatives and making a real impact.

I used to wonder how one person could make a difference, until I went vegan. I saw my family members follow, then my restaurant staff, and now the thousands of guests who choose a plant-based meal at Justbe. It proves the saying, "एक बूंद बूंद करके ही समुंदर बनता है" (an ocean is formed drop by drop).
