When I say decadent, I mean real couverture chocolate, not the processed compound blocks. Using high-quality cocoa makes all the difference in the deep, fudgy texture and intense flavour, which you get without needing heavy frosting or condensed milk.

My chocolate cakes are all about stripping away the nonsense. You won't find any mounds of whipped frosting or sugary fondant here. Instead, I focus on the crumb and the quality of the cocoa. Because I use 100% whole wheat or millet flours and jaggery, the cake itself is the star.

Why I Bake This Way

I believe you shouldn't have to choose between a 'healthy' cake and a delicious one. My process involves:

  • Couverture Chocolate: This is real chocolate with a higher cocoa butter content, giving you that 'melt-in-your-mouth' experience that standard compound chocolate simply can't match.
  • Natural Sweeteners: I use chemical-free jaggery powder or coconut sugar. This provides a deep, caramel-like sweetness that complements the bitterness of dark chocolate perfectly.
  • The 'Naked' Finish: By leaving the sides exposed, you can actually see the texture of the bake. I top these with seasonal ingredients like fresh strawberries, orange slices, or spiced cherry compote, which adds a bright, fresh contrast to the rich chocolate.
