Here’s a quick look at how I make my rich chocolate truffle cake. I layer the moist chocolate sponge with my house-special ganache and then create a beautiful piped pattern on top for that classic, elegant finish.

Watch the making of this cute Minecraft cake. I started with a vanilla cake and dark chocolate ganache, then covered it with whipped cream in Minecraft colors and added edible 2D characters. The birthday boy loved it.

Creating a galaxy effect with a mirror glaze is one of my favorite techniques. Here, I'm pouring a custom-colored purple, blue, and white glaze over a rich chocolate cake to create an edible work of art. This glaze is made without any gelatin or agar agar.

  • Character Cakes: From Minecraft to superhero themes, I use a mix of edible prints and hand-sculpted fondant. I focus on getting the colors and details exactly right so your kid sees their favorite character come to life.
  • Fresh Ganache: I prefer fresh ganache over heavy artificial coatings for my drip cakes. It takes more time to get the consistency right, but it makes the cake taste like an actual dessert rather than just sugar.
