A look back at our first Cocktail Coalition with Zest from Seoul, currently ranked Asia's #2 bar. We explored Delhi's markets for local ingredients, shared our minimal-waste philosophy in a workshop, and co-created a sustainable menu that celebrated the fusion of our cultures. This is what our collaborations are all about: shared energy, learning, and creating something truly new together.
When the team from FOCO in Barcelona visited, we took them straight to the chaos and inspiration of Old Delhi's spice markets. This trip formed the foundation of our collaboration, where we blended their classic techniques with incredible Indian ingredients for a one-night-only menu. The energy and creativity were unforgettable.
We were thrilled to host our friends from Reka in Kuala Lumpur for the second edition of Cocktail Coalition. Together, we explored local markets to source unique Indian spices and botanicals, resulting in a cross-cultural menu that showcased the beauty of true collaboration. It is always a pleasure to see how our design and hospitality DNA resonates with our global peers.
This was the blueprint for our "Modernising Classics" night with Barcelona's FOCO. Unlike a standard takeover, this was a deep, collaborative workshop where we deconstructed classic cocktails and rebuilt them using local Indian ingredients and innovative techniques. The goal was to share knowledge and create a menu that was both familiar and entirely unexpected.
For us, a Negroni is more than a drink; it's a philosophy of balance, much like life itself. Here, our team shares their perspective on this timeless classic during Negroni Week, showcasing the precision, temperature, and high-quality ingredients like Campari that are key to the perfect serve. It’s this dedication to the craft that we bring to every glass.
The night Lair was taken over by the incredible energy of Tres Monos from Buenos Aires. Their vibrant, edgy style and iconic neon monkey logo lit up the bar, creating a truly memorable experience. It was a fantastic reminder of how different cultures can connect and create a unique vibe, making everyone feel at home.

When we host a guest bartender, we don't just hand over the bar. We take them into the spice-laden gullies of Old Delhi to hunt for local ingredients. This is the heart of our Cocktail Coalition—we spend days working side-by-side to deconstruct classics and rebuild them with Indian spices, ensuring the menu we serve is something you literally cannot taste anywhere else.
The Cocktail Coalition is our flagship series, but it is not a standard bar takeover. It is a full-scale workshop where we swap ideas with legends from bars like Zest in Seoul or FOCO in Barcelona. By focusing on the 'how'—the distillation techniques, the fermentation experiments, and the sourcing of rare botanicals—we create one-night-only menus that reflect a true cross-cultural exchange.
We believe that a great cocktail is a conversation. During these collaborations, we host intimate masterclasses where our local bar community can pick up skills from the visiting crew, whether it's modernizing a Negroni or mastering zero-waste mixology. Our goal is to bring the world to Delhi, and occasionally, we take a bit of our local energy back out with us when we travel.
